Recipe of the Month

Broiled Tuna with Roasted Pepper and Oregano Sauce

6 servings/serving size: about 4 oz.
Preparation time: 20 minutes
Cooking time: 10 minutes

1½ lb. tuna steaks
Salt and pepper to taste
4 Tbsp. fresh lemon juice, divided
1/3 cup jarred diced, roasted red peppers
¼ cup minced scallions
1½ Tbsp. fresh minced oregano
1 Tbsp. minced fresh parsley
¼ cup balsamic vinegar
2½ Tbsp. olive oil

  1. Preheat an oven broiler. Place the tuna steaks in a glass cooking dish. Sprinkle with salt and pepper. Drizzle with 2 Tbsp. of the lemon juice and set aside.
  2. Meanwhile, combine remaining lemon juice with the other ingredients in a medium saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes.
  3. Place the tuna steaks on a foil-lined broiler pan. Broil the tuna for about 4 to 5 minutes per side until desired doneness. Serve with the sauce on the side.
