How many carbs are there in butternut squash soup? "Is it a freebie"?
It is great that you are experimenting in the kitchen with fresh vegetables. This recipe also sounds relatively easy to make, which is always a good thing!
Butternut squash is a starchy vegetable so it is higher in carbohydrates than non-starchy vegetables like yellow squash, zucchini, salad greens, carrots, etc. You should not consider it a “freebie” because the carbohydrates in butternut squash will cause blood glucose to rise.
You can still have some carbohydrates with diabetes, you just need to monitor how much you eat. Though butternut squash is high in carbohydrates, it is still a very healthy food that is packed with nutrients including iron, fiber, vitamin A and vitamin C. It also has no fat, cholesterol, or sodium.
When you include butternut squash and other starchy foods in your meal plan, be sure to have appropriate portion sizes. This will help you keep your blood glucose in your target range.
One cup of cooked butternut squash has about 22 grams of carbohydrate and 80 calories. It sounds like your recipe has no extra carbs or calories since water is the only other ingredient. You may also want to try to choose recipes that provide the nutrition information to make meal planning easier.
