Quick Chickpea Dip

This Recipe Serves 16 servings (2 cups total)


1 can (16-ounce) chickpea (garbanzo) beans, rinsed and drained
2 tablespoons light mayonnaise
1/2 lemon, juiced
¼ cup red pepper, diced
¼ cup celery, diced
Pinch ground black pepper
Pinch cayenne pepper or paprika (if you prefer less spicy, use paprika)
2 cucumbers, peeled and sliced into rounds


  1. In a small bowl, coarsely mash chickpeas with a potato masher, leaving some beans whole.
  2. Add remaining ingredients except for cucumber and mix well.
  3. Spoon about 1 tablespoon chickpea dip on each cucumber round
