Slow-Cooker Ropa Vieja - Foodie Recipe

This Recipe Serves 10

Ingredients

2 lbs flank steak
2 red bell peppers, seeded and sliced
1 large red onion, sliced
1 cup fresh cilantro (with stems)
1 15-oz can no salt added diced tomatoes
1/2 cup red wine vinegar
4 cloves garlic minced
½ tsp salt (optional)
½ tsp ground black pepper
1 tsp cumin
¼ tsp crushed red pepper flakes

Instructions

  1. Add all ingredients to the slow cooker, cover and put on high for 6 hours.
  2. When the meat is done, gently remove from the sauce. Puree the sauce with an immersion blender or in a stand blender.
  3. Shred the beef and return to the sauce.
