This quick and healthy recipe makes a great appetizer for a party. Feel free to substitute canned tuna for crab if desired; just omit the tarragon and replace with chives.

2-6 ounce cans crab meat, drained (15% leg meat)
1/3 cup light mayonnaise
1 teaspoon Dijon
2 green onions, sliced
½ red bell pepper, finely diced
1 tablespoon lemon juice
¾ teaspoon tarragon, dried
2 tablespoon sweet relish
Pinch of cayenne pepper or paprika
1/8 teaspoon freshly ground, black pepper
2 cucumber, peeled and sliced into rounds
