Blueberry Pancakes with Hot Blueberry Topping from Domino® Light & C&H® Light

This Recipe Serves 8


3/4 cup all-purpose flour
3/4 cup whole wheat flour
3 1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon Domino® Light Sugar & Stevia Blend
1 1/4 cups 1% milk
1 large egg
1 tablespoon unsweetened applesauce
1 teaspoon canola oil
1/2 teaspoon vanilla extract
5 oz. fresh blueberries, rinsed and slightly crushed (approx. 1 cup)

Light Hot Blueberry Topping
12 oz. fresh blueberries (approx. 2 1/2 cups)
1 tablespoon Domino® Light Sugar & Stevia Blend
1 teaspoon cornstarch


For Pancakes:

  1. In a large bowl, whisk together the flour, baking powder, salt and Light Sugar & Stevia Blend.
  2. Make a well in the center and pour in the milk, egg and oil; mix until smooth. Fold in blueberries.
  3. Coat a griddle or frying pan with cooking spray. Over medium heat, pour the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and now they are ready to eat.

For Topping:

  1. In a 2-quart microwave-safe baking dish or bowl, add blueberries and Light Sugar & Stevia Blend, mixing well. Place in microwave on high power for a total of 3 minutes, stirring after each minute. Crush some of the blueberries to create a sauce.
  2. After 3 minutes, remove 1 tablespoon of the blueberry juice to a small cup or bowl and combine with the cornstarch. Stir to dissolve, then add back into blueberry mixture.
  3. Mix well. Allow to cool slightly, then use as a topping for our Domino® Light Blueberry Pancakes. Also makes a great topping for frozen yogurt!
