These muffins are packed with healthful carrots, zucchini and apples – make a batch then freeze individually for a quick anytime snack.

This Recipe Serves 12

Ingredients

4 ounces carrots, cleaned, peeled and grated
6 ounces grated zucchini
1 small apple, peeled, cored and chopped
3/4 cup whole-wheat flour 
1/3 cup Domino® Light Sugar and Stevia Blend
2 tablespoons canola oil
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
2 large eggs 
1/2 teaspoon vanilla extract, optional

Instructions

  1. Preheat oven to 350° F. Grease 12-count muffin pan or line with baking cups and grease liners.
  2. Mix all ingredients in a large bowl until combined.
  3. Fill each cup of the baking pan to the top. Bake 25 – 30 minutes until toothpick inserted comes out clean.
