Coconut Brown Rice Pudding from Domino® Light & C&H® Light

This recipe slow cooks brown rice to a caramel brown color and a creamy consistency. Coconut water is high in potassium and fat free. A touch of molasses in this recipe adds a bit of a brown sugar note too.

This Recipe Serves 6


2/3 cup long grain brown rice
1 1/2 cups unflavored coconut water
3 tablespoons Domino® Light Sugar & Stevia Blend
1/2 teaspoon molasses
1/2 teaspoon vanilla extract
1/2 cup (canned) lite coconut milk
2 tablespoons dried unsweetened coconut, shredded or chips
1/4 teaspoon salt


  1. Rinse rice if package directions instruct to do so.
  2. Combine rice with all remaining ingredients in medium saucepot with fitted lid. Heat over medium-high heat, stirring, until mixture comes to a boil. Reduce heat to simmer. Simmer covered and stirring occasionally 1 hour – 1 hour 15 minutes, or until rice is tender.
  3. Add water, as necessary, to allow rice to continue to cook if grains are still hard.
