This Recipe Serves 4

1 cup Dannon® Light & Fit® Plain Greek Nonfat Yogurt
1/4 cup minced fresh cilantro
1 tablespoon vegetable oil
1/2 teaspoon ground cumin
1/2 teaspoon minced chipotles in adobo
1/2 teaspoon mashed garlic
Juice and zest of 1 lime
Salt, to taste
1 pound catfish, sea bass, cod, or tilapia strips
8 butter lettuce leaves
1/2 cup chopped ripe red tomato

  1. In a bowl, mix Light & Fit® Greek Yogurt, cilantro, oil, cumin, chipotle, garlic, lime juice and zest, and salt to taste.
  2. Place strips of fish in a separate bowl and add half of the yogurt mixture to fish. Toss fish to coat. Cover and refrigerate 1/2 hour before cooking.
  3. To cook, place fish strips on a parchment-covered baking sheet and broil or grill 1-2 minutes per side, depending upon the thickness of the fish strip, and remove from heat.
  4. Place 2 lettuce leaves together to form a cup on each of 4 plates. Mound fish inside each lettuce cup, evenly divided between cups. Spoon 2 tablespoons of remaining sauce onto the fish and top each with 2 tablespoons chopped tomato to garnish.
