Pear-Walnut Crumble

Pears are in season during the winter and can be used to make some great fruit-based desserts!

This Recipe Serves 9

Ingredients

1/2 cup whole-wheat pastry flour
1/2 cup old-fashioned rolled oats (not instant)
1/3 cup brown sugar substitute (Splenda)
1 tablespoon butter
1 tablespoon canola oil
2 tablespoons orange juice concentrate
2 tablespoons chopped walnuts

Instructions

  1. Preheat the oven to 375ºF.
  2. Coat to a 2-quart baking dish with cooking spray. In a bowl, toss the pears, Splenda, orange juice and orange zest and add to the baking dish.
  3. In another bowl, combine the flour, oats and brown sugar. Add the butter and work the butter in with your fingertips or a pastry blender until mixture resembles coarse crumbs. Add the oil and mix well. Add in the orange juice concentrate until the mixture is moistened.
  4. Spread the crumble mixture evenly over the pears. Bake for about 25 minutes. Top the crumble with the walnuts an continue to bake for another 20 minutes until pears are soft and toppings is browned
