Quick No-Cook Meals for the Summer

Summer is in full swing and the heat is rolling in! This month we will focus on meals that require little to no cooking to help you beat the summer heat and keep your kitchen cool.  Whether it’s vacation plans or outdoor activities, let’s check out these cool and refreshing recipes when it’s too hot to cook.  They’re perfect for a busy summer schedule or a lazy Sunday, not to mention they are healthy too.

Greek Chicken Salad – Packed full of flavor and easily meets the goal of making half your plate veggies with the lettuce, tomatoes and cucumbers.  Purchase grilled chicken strips already cooked or a rotisserie chicken at your local supermarket for a no-cook delicious summer dinner.

Gazpacho – What a refreshing summertime snack! Gazpacho is served cold and can be a great way to get more veggies into your day!

Avocado Tuna Salad – This makes a fast and easy lunch or dinner.
